Easy Baked Chicken
Baked chicken is fast becoming a frequent sight in our kitchen. It is perfect for weekday nights when we are tight on time. Its easy and fuss free. Season and baked... that is about it.
We do make a lot when we do chicken. I love the dark meat and the hubby loves the breast. So we buy both dark and white meat and make a whole lot of chicken. They make good left over for lunch. Sad to day, there is usually not much left for lunch as they are so good :)
The hubby made these on Monday and they were awesome with just 7 ingredients
Ingredients:
1. Chicken parts
2. Salt
3. Pepper
4. Paprika
5. Onion Powder
6. Cinnamon
7 . Bacon
Directions:
1. Heat the oven to 400
2. Season the chicken parts with ingredients 2-6 according to taste
3. Put the chicken parts in a baking dish and lay some bacon over them
4. Bake for 40 mins. Put on boil for 2 mins to crisp the bacon
5. Serve and Eat

Oven Baked Chicken
I love oven baked chicken especially homemade ones. I hate getting them from the stores as I never know what was added.
Our friend Michelle's daughter is in the Agriculture school and had raised some chickens for a show. These chicks are raised in the school barn with no hormones injected. She sent them to the slaughtering house after the show was done. We bought some of the chicken from her. Gosh.. these chickens are young and tender.
This is an easy recipe which I made it up as I go :)
Ingredients :
1. 1 chicken ( 3-4 pounds)
2. Salt and Pepper
3. Paprika
4. Cajun seasoning
5. Butter
6. 1/2 pound bacon
7. Green beans and Carrots
Directions:
1. Heat the oven to 425
2. Rinse the chicken and pat it dry
3. Season it liberally with salt, pepper, Cajun seasoning and Paprika
4. Run the butter liberally on the skin.
5. Stuff 2-3 bacon in the cavity
6. Lay some bacons on the top of the chicken
7 Put the vegetables in the pan before you put the chicken breast down on the roasting rack
8. Bake the chicken for at 425
7. Check on the bacon about 30 mins and remove them if they get brown. You do not want burnt bacon
8. A 3-4 pound chicken will be done in about 1hr 30 min but I will check every 10 min after the hour to make sure.

Oven baked Chicken Fajita
The hubby sent me a link of this recipe from a facebook page "$5-$10 dollars meals". It looked so easy good and yummy that I could not resist the temptation to try the recipe. Yes... this is an awesome recipe. Took only 10 minutes preparation time. I did all the prep work in the afternoon and popped it in the oven when we got back from our run yesterday. Easy and convenient
Ingredients
1 pound boneless, skinless chicken breasts, cut into strips
2 Tbsp vegetable oil
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp seasoned salt
1 (15 oz) can diced tomatoes with green chilies (Rotel)
1 medium onion, sliced
1/2 red bell pepper, cut into strips
1/2 green bell pepper, cut into strips

2. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt.
3. Drizzle the spice mixture over the chicken and stir to coat.
4. Next add the tomatoes, peppers, and onions to the dish and stir to combine.

Chicken Salad
The hubby makes the best chicken salad. This pic definitely does not do justice to his chicken salad. I took a quick pic of it after it was almost half done.
We had bought the chicken salad to many parties and had always receiving raving approval of it. And YES.. the boy is very proud of his recipe.
There was no exact recipe per se. It was always made per the boy's estimation and feel.
But here's a peek of the ingredients :
Ingredient:
1. 1 rotisserie chicken, tear apart and chopped into cube
2. Celery, sliced
3. Onion, finely chopped
4. Grapes, halfed
5. Mayonaise
6. Dijon mustard
7. Salt
8. Pepper
9. Cayenne pepper
10. Lawry's seasoning salt
11. Paparrika
Direction:
1. Mixed everything together per taste.

Paleo Gumbo (Crockpot)
I have been thinking of Gumbo since I saw the pack of Andouille sausage which the hubby bought. So the search begins for a good recipe. Its hard to find a recipe which I like so I decided to create my own using various source.
Surprisingly, my creation turn out pretty good. The hubby had two helpings... so it must be good :
Ingredients:
One and half pound of chicken breast, cut into cube
A pack of Andouille sausage
One green pepper, diced
One onion, chopped
11/2 cup of okra, diced
1 cup of diced tomato with juice
2 cup of chicken stock
1 tablespoon of paparika
1 tablespoon of oregano
1 tablespoon of thyme
1 teaspoon of celery seed
1 teaspoon of cayenne (more or less to taste)
salt and pepper to taste
Directions
1. Marinate the chicken with the spices for at least 30 minutes
2. Brown the sausage in a pan with olive oil.
3. Brown the chicken in the pan after the sausage.
4. Lay the crockpot with onion,pepper, okara. Add in the chicken stock and diced tomato.
5. Add the saugage and chicken. Add in more spices if desired
6. Cook for 7-8 hours on low

Slow Cooker Jambalaya Chicken
Chicken is fast becoming our staple these days as they are easy and it is hard to mess up with chicken. I found this slow cooker Jambalaya recipe at Allrecipe and could not resist sending it to the BF with some modifications.
The BF put the chicken in the slow cooker, took a picture and posted it on FB.. inviting friends for dinner " first come first served". One couple took up the "dinner offer". This is really a great easy recipe for week days dinner. We put everything in the crock pot, went for our evening run and came back at 9pm. Our couple friend arrived with a bottle of wine and dinner was served . No hassle and no mess :)
Both the BF and I agreed that this recipe is a keeper. We made it with just chicken and agreed that we would add sausages the next time we made it
Ingredients ( with my modifications)
1 pound boneless skinless chicken breasts, cut into 1-inch cube
2 cans diced tomatoes ( one original and one fire roasted)
1 medium onion, chopped
1 green bell pepper, seeded and chopped
1 stalk celery, chopped
1 cup reduced-sodium chicken broth
2 teaspoons dried oregano
2 teaspoons Cajun or Creole seasoning
1 teaspoon hot sauce
2 bay leaves
1/2 teaspoon dried thyme
2 carrots
Directions
1. In a slow cooker, combine chicken, tomatoes, onion, green pepper, celery, and chicken broth. Stir in oregano, Cajun seasoning, hot sauce, bay leaves, and thyme.
2. Cover, and cook on LOW for 7 hours or on HIGH for 3 hours.

Paleo Crockpot Pork Loin
Survived the first week on Paleo!!! *Phew* !!
We have been cooking more at home than usual because of the diet restriction. The BF has been diligent in his cooking and lucky me get to eat ! He made this pork loin last week. Another easy recipe which requires only a crockpot.
Ingredient
1-1/2 lb pork loin
1 (16 oz) can tomato sauce
2 medium (6"-8") zucchini, sliced
1 head cauliflower, separated into medium florets
1-2 Tbs dried basil
1/4 tsp freshly ground black pepper
1/2 tsp sea salt (optional)
Direction:
Add all of the ingredients to a large crock pot.
Cook on high for 6-7 hours.

Baked Chicken with Balsamic Peppers
Someone mentioned "Paleo Diet" last week and curious me was on the internet the whole week reading about this diet and Paleo recipes.
I saw this chicken recipe and decided to try it last night. I bought the ingredients, sent the recipe to the BF and told him that he is making dinner :). The BF did a great job on this... it is so yummy good.
This is a easy recipe.. good for weekdays. We served the chicken with some green beans and brown rice. So good !
Ingredient
4 large ripe bell peppers: red, green, orange, yellow; cored and sliced thin
1 large sweet onion, sliced thin
1/3 cup organic balsamic vinegar
2 tablespoons gluten-free Worcestershire Sauce
1/4 cup extra virgin olive oil
1/4 cup or so chicken broth
6 fresh cloves of garlic, chopped
1 tablespoon dried basil
1/2 teaspoon thyme
1/2 teaspoon rosemary
4 fresh, organic free-range split breasts of chicken, rinsed and patted dry
Sea salt and ground pepper, to taste
Directions:
1. Preheat oven to 375ºF.
2. Toss the pepper and onion slices in a large bowl. In a large measuring
cup, fork-stir your sauce using: balsamic vinegar, Worcestershire, olive
oil, broth, chopped garlic, and herbs. Pour the sauce over the sliced
peppers and onions and toss well to coat.
3. Place the split chicken breasts in the bottom of a baking pan sprayed
with olive oil. Season with sea salt and pepper, to taste. Pour the
balsamic pepper mixture over the chicken and arrange them evenly. Use
every last drop of sauce.
4. Loosely cover the pan with a piece of foil and place in the center of a
pre-heated oven. Bake for 20 minutes. Spoon the sauce all over the
peppers and chicken breasts to keep
everything happy and moist, recover it and continue to bake until
everything is
melt-in-your-mouth tender (depending upon the thickness of the chicken,
and the size of your pepper strips, and your particular oven and
altitude it could be an additional 10 minutes or 20 minutes).

Baked Chicken


The family has been asking me to use the new oven in Singapore when I go back in February for Chinese New Year. (well, my mother said that no one is to use the oven till I am home ).
My sister wanted Chicken.
I have been looking around for chicken recipe and decided on this simple bake chicken
Ingredients:
1) 1/3 cup of olive oil
2) 1/4 cup of fresh lemon juice
3) 1-1.5 tablespoon of rosemary
4) Salt and pepper to taste
Directions:
i) Marinate the chicken overnight with the ingredients
ii) Bake the chicken at 450F for 20 minutes, reduce to 350F
iii) Chicken is ready when the thermometer read 165F
